LCHF walnut cookies

Extraordinarily aromatic and delicious biscuits that are an eye-catcher on the festive table. 

INGREDIENTS

If Erythritol with stevia is replaced by regular Erythritol, the amount of sweetener must be adjusted or increased accordingly. Erythritol with stevia is about 25% sweeter than regular Erythritol. Live & love brand Erythritol with stevia does not have a 'cold' taste, which is not excluded with other brands of regular Erythritol. The recipe uses Live & love brand defatted almond flour, which is light and finely ground and does not taste like marzipan.

METHOD

I prepare the dough for these cookies in a food processor with a regular blade. But you can probably also use a kitchen mixer, starting with the whisk attachment and finishing with the kneading hook. But you can also knead the dough by hand.

Add the sweetener to the egg yolks, mix well, then add the cubed butter and the dry ingredients. The dough forms a homogeneous soft dough, which is shaped into a ball and placed in the fridge for about 30 minutes.

Roll out the dough (in batches) between two baking sheets. Cut out the desired shapes using the moulds. Place the biscuits on a baking tray lined with baking paper.

Whip the egg whites until stiff. Slowly add the sweetener while whisking. Finally, add the ground walnuts.

Place the egg white mixture in a piping bag. For pretty flowers, use the open rosette nozzle. If you don't have a piping tip, cut the tip off the bag and pipe the mixture onto the biscuits without the piping tip. If desired, you can also add pieces of whole walnuts to the egg white mixture.

Preheat the oven to 160 degrees and bake for about 15 minutes to give the biscuits a delicate colour. The baking time depends on the oven and the size (and thickness) of the cookies.

Cool the baked cookies and decorate them with chocolate icing if desired.
