Orehove LCHF rezine s čokolado

Odlične LCHF orehove rezine, ki bodo šle v slast vsem! Priprava je popolnoma enostavna in zaradi barvnega kontrasta tudi zanimiva na pogled.

POSTOPEK

V multipraktik z rezilom damo: 2 jajci, sladilo, na kocke narezano maslo, temno čokolado in vinski kamen. Zmešamo v homogeno maso. Iz beljakov naredimo sneg. Vsebino iz multipraktika prestavimo v skledo, dodamo mlete orehe in nežno vmešamo sneg.

Pekač v katerem bomo pekli obložimo s peki papirjem. Jaz imam obroč za peko, ki sem ga nastavila na cca 25 x 26 cm. Lahko uporabimo katerikoli manjši pekač. Naložimo orehovo maso in pazimo, da je masa enakomerno poravnana. Pečemo na 180 stopinj približno 25 minut (oziroma odvisno od pečice – ne sme se preveč zapeči). Dolžina peke je odvisna tudi od debeline mase.

Vmes penasto zmiksamo rumenjake in sladilo. Masa mora biti puhasta, zelo naraste in postane nežno rumene barve. Dlje, ko miksamo (cca 10 minut), bolje je.

Ko je orehova podlaga pečena, vzamemo iz pečice in takoj namažemo z jajčno kremo. Potisnemo nazaj v pečico za cca 10 minut, da rumenjakova krema zakrkne.

Vmes na vodni kopeli stopimo čokolado, dodamo kokosovo olje in ko je pecivo pečeno, ga še toplega prelijemo s čokolado.

Za preliv lahko naredimo tudi ganache - segrejemo 100 ml smetane (ne sme zavret) in dodamo 100 g čokolade, stopimo, polijemo po topli jajčni kremi.

Pustimo, da se popolnoma ohladi, narežemo na rezine ali kocke in postrežemo. Pecivo je čvrsto in ga lahko narežemo tudi na male kocke in postrežemo v papirčkih za mafine ali pralineje. Najlepše se reže z zelo ostrim nožem, ki ga pred vsakim naslednjim rezom obrišemo.

Moji nasvet:

  • Lahko uporabimo tudi cela jedrca orehov. V tem primeru jih damo skupaj z ostalimi sestavinami v multipraktik. Če multipraktika nimamo, lahko sestavine zmešamo tudi z navadnim mešalnikom. V tem primeru moramo čokolado nasekljati ročno in maslo mora biti pred miksanjem malo zmehčano.
  • Namesto orehov lahko uporabimo tudi lešnike.
  • V primeru, da Eritritol s stevijo menjamo z navadnim eritritolom moramo količino sladila ustrezno prilagoditi oziroma povečati. Eritritol s stevijo je za cca 25% bolj sladek kot klasičen eritritol. Eritritol s stevijo blagovne znamke Live & love ne peče in nima hladnega priokusa, kar pa ni izključeno pri navadnem eritritolu drugih blagovnih znamk.
  • Rezine hranimo v hladilniku v pokriti posodi, da se ne izsušijo. Najboljše so dobro ohlajene.
