LCHF Halloween cup cakes – male jesenske tortice

Te male tortice (cup cakes oz. mafini s kremo 😉) so kot nalašč za jesenski čas ali pa za noč čarovnic. So prijetno aromatične in združujejo tople okuse jeseni. Lahko jih spremenimo v prisrčne duhce ali pa elegantne jesenske tortice. Izbira je vaša. 

SESTAVINE:

Za 6 velikih cup cakesov (ali 10 - 12 običajnih) potrebujemo:

  • 2 jajci
  • 100 g masla (stopljenega)
  • 2 jedilni žlici sladke smetane (tekoče)
  • 100 g eritritola s stevijo Live & love
  • 150 g bučnega pireja (za kar potrebujemo 300-350 g sveže buče maslenke)
  • 1 pecilni (vinski kamen)
  • 150 g razmaščene mandljeve moke Live & love
  • 1 jedilna žlička limoninega soka
  • 2 ščepa limonine lupinice
  • 1/2 stroka vanilije (postrgana vsebina) ali aroma vanilije
  • ščep soli

Za kremo potrebujemo:

  • 150 g mascarpone
  • 70 ml sladke smetane (tekoče)
  • 1 zvrhano jedilno žlico eritritola s stevijo Live & love (oz. po okusu)
  • cimet ali vanilija za aromo (po želji!)

V primeru, da eritritol s stevijo menjamo z navadnim eritritolom moramo količino sladila ustrezno prilagoditi oziroma povečati. Eritritol s stevijo je za cca 25 % bolj sladek kot klasičen eritritol. Eritritol s stevijo blagovne znamke Live & love ne peče in nima hladnega priokusa, kar pa ni izključeno pri navadnem eritritolu drugih blagovnih znamk.

POSTOPEK:

Bučni pire pripravimo iz 300 - 350 g sveže olupljene buče maslenke (gre tudi iz buče hokaido, samo maslenka ima najbolj nežen okus). Bučo narežemo na kose in pečemo na peki papirju 40-50 min na 170 stopinj. Vmes preverimo - ko je mehka, je pečena. Pazimo, da se ne zažge. Vročo pečeno bučo spasiramo s paličnim ali v blenderju. Vročo zato, da izpari dodatna vlaga iz pireja med miksanjem.

Jajca penasto zmiksamo s sladilom, dodamo maslo in ostale mokre sestavine, vključno z bučnim pirejem. Na koncu vmešamo še suhe sestavine (mandljevo moko s pecilnim, limonino lupinico, sol).

Pripravimo pekač ali modelčke za mafine. Jaz imam silikonski model in ga rahlo namažem z maslom, pri kovinskem uporabljam papirčke za mafine.

Maso razdelimo v modelčke. Pečemo 30-40 min na 180 stopinj. Zadnjih 10 min lahko znižamo na 170, da se ne zapečejo preveč. Čas trajanja peke je zelo odvisen od velikosti mafinov in tudi od pekača ter od pečice. Če imamo manj mase v modelčkih potem čas peke skrajšamo. Mafini so pečeni, ko z zobotrebcem preverimo in je zobotrebec suh oz. brez mokrih ostankov biskvita.

Mafine ohladimo na rešetki.

Kremo naredimo tako, da zmiksamo mascarpone s sladilom in med miksanjem počasi dodamo (vlivamo) sladko smetano. Miksamo toliko časa, da se na masi začnejo poznati sledi metlic in krema postane čvrsta. Vmes poskusimo kremo. Če ni dovolj sladka dodamo sladilo po okusu. Lahko vmešamo tudi vanilijo ali malo cimeta.

Kremo z dresirno vrečko nabrizgamo na mafine in tako nastanejo male tortice oz. cup cakes. Okrasimo po želji in glede na priložnost.
