Anyone who has been dealing with nutrition for a while and uses low-carb and gluten-free flour alternatives in recipes knows that achieving fluffy, soft dough that rises and has a crispy exterior is not that easy. This is especially challenging with low-carb gluten-free breads, pizza dough, etc. But bamboo fibers significantly change the situation! They are an ideal addition for baking, as they contain only 0.1 g of carbohydrates per 100 g and over 95% fiber. They affect the texture, softness of the dough, and the crispy exterior. Yes, it’s true: bread gets a crispy crust with the help of bamboo fibers! Additionally, they are fat-free, lactose-free, vegan, and suitable for those who cannot use nut flours due to allergies.

Unlike regular defatted flours, bamboo fibers are nearly tasteless. This makes them versatile in use. Baked goods obtain a fuller, softer texture due to bamboo fibers; they are soft inside and crispy outside. Due to their ability to bind liquids, bamboo fibers are an ideal combination with other flours, as they improve dough properties. They can also be used for rolling out dough or as dusting during pizza baking.

Baking: Replace part of the flour in bread, pastries, or cookies with bamboo fibers to increase fiber content and improve dough texture. The fibers work excellently for rolling out dough, as they prevent sticking. In bread and rolls, bamboo fibers ensure an exceptionally light interior and a rustic crispy crust. You can easily substitute a portion of defatted flour (1-2 tablespoons) with bamboo fibers in most bread recipes. Due to their fiber composition, it is not recommended to replace the entire flour content in a recipe with bamboo fibers, but only part of it, as it may otherwise cause bloating.

Enhancing Crispiness: Due to their moisture-absorbing capabilities, bamboo fibers contribute to a crispy crust, especially in products like bread and pizza.

Reducing Caloric Value: Bamboo fibers lower the energy value of products, which is popular in various low-carb and weight-loss diets.

For Diabetics: Bamboo fibers are nearly carb-free, meaning they do not impact blood sugar levels, which is crucial for managing diabetes. With a high content of insoluble fiber (96%), they help improve digestion and increase satiety.
