What exactly is gelling erythritol?

BIO gelling erythritol is an alternative to regular gelling sugar. BIO erythritol has added pectin, which provides gelling and thickening, and citric acid. BIO erythritol from the Biosüße brand is the first European certified BIO natural sweetener produced WITHOUT genetically modified raw materials, using natural fermentation from organically grown corn. This means that it is one of the natural sweeteners. Erythritol is present in its natural form in fruits (watermelons, pears, peaches and grapes), mushrooms and fermented foods (cheeses, wine, beer…).

Erythritol is completely energy-free, almost identical in taste to white sugar (80% sweetness of white sugar), does not cause caries and does not affect insulin (glycemic index = 0). Due to these properties, it is an excellent sugar substitute for everyone, including diabetics. The product is GMO-free, Halal and Kosher certified. FREE of gluten, glucose, lactose, fructose, artificial flavors and additives. Suitable for vegans.

INGREDIENTS

Erythritol *, inulin *, gelling agent: pectin, citric acid, calcium citrate * Ingredients from controlled organic production. Due to the way the ingredients are produced, cross-contamination with traces of eggs, gluten, milk, soy, celery and sulphite cannot be ruled out.

USE

Clean 1 kg of any fruit, cut it into pieces and put it in the saucepan together with the whole package of BIO gel sweetener. Stir over medium heat for 5-10 minutes until the pieces of fruit dissolve nicely and soften (depending on what kind of fruit we have). If desired, the fruit can also be saved and thus get a jam that has a smoother texture. But we can also leave the pieces. Pour the hot jam into clean, warm jars, close well and turn the jars upside down for 5 minutes. Since such jam does not contain sugar, which acts as a preservative in ordinary jams, we recommend storing the prepared jam in the refrigerator and consuming it quickly after opening. 

TIP: to prepare fruit jelly, 1 kg of fruit can be replaced with 750 ml of fruit juice. Frozen fruits (berries, blueberries, strawberries, raspberries…) can also be used to cook jam, prolonging the cooking time until the fruit thaws and then cooks.

Excessive consumption can have laxative effects. Keep out of reach of children. The shelf life of the product is indicated on the packaging.
