Defatted almond flour - a sophisticated choice

With almond flour, everything can be created, from buns, bread, pancakes, dumplings, biscuits, cakes… all without GLUTEN and with a low content of carbohydrates! It sounds like a fairy tale, but it’s actually real!

How do we even get defatted almond flour?

Almond (scientific name Prunus dulcis) belongs to the genus Plum (Prunus) from the corneal family. Almond is the seed of the almond tree. Almonds are therefore not nuts, but stone fruits with a high value of vitamin E, magnesium and are rich in unsaturated fatty acids. Due to their high content of quality fats, almonds are used for the production of almond oil. This is done by cold-squeezing the ground almonds to form an oil and a residue in the form of an almond “cake” rich in fiber and protein. When finely ground and sieving this residue, defatted finely ground almond flour is formed.

Defatted almond flour - strong competition to wheat flour!

Defatted almond flour is a healthy alternative to wheat flour, as it is rich in protein, fiber, and at the same time has a low glycemic index and few calories. With defatted almond flour, wheat flour can be completely replaced in baking and cooking. The only thing to watch out for is the ratios. As it does not contain gluten, and has poor binding capacity in cakes and bread, it is recommended to add a teaspoon of ground psyllum or xanthan. Defatted almond flour has a high fiber content and behaves slightly differently from classic wheat flour when baked. It binds more fluid to itself, so recipes need to be slightly adjusted in this regard. You can add more liquid or replace the liquid with an extra egg. 

Tip for perfect baking

Let us entrust you with the secret of how to bake the perfect cake with defatted almond flour. Quite simply: recipes require much less defatted almond flour than classic wheat. Approximately 50 - 60 g of almond flour replaces 100 g of classic wheat flour.

What is the difference between defatted almond flour and ground almonds?

The advantage of defatted almond flour compared to ground almonds lies in its lower calorie value, high protein value and lightness of the finished product.
