Valentinove LCHF tortice

Valentinovo je poseben dan. Vsaj zame. Pa ne zato, ker je Valentinovo, ampak zato, ker imam na ta dan rojstni dan. In vsako leto pečem rojstnodnevno torto, ki je vsaj malo v znamenju Valentinovega. Torej s srčki in z rdečo barvo. Tudi letos je tako. Že nekaj let je moja rojstnodnevna torta brez sladkorja in brez moke, v LCHF izvedbi. Letos sem se peke torte lotila malo prej, ker sem želela preizkusiti nov recept. Tortice so uspele in verjetno bom ponovila vajo za rojstni dan oziroma Valentinovo.

SESTAVINE za torto premera 26 cm (ali za 8-10 malih porcijskih tortic):

  • 2 jedilni žlici želatine fix

Najprej stopimo temno čokolado nad vodno kopeljo. Rumenjake in beljake za biskvitno plast ločimo in stepemo beljake v mehek sneg. Rumenjake posebej penasto umešamo z eritritolom s stevijo ter dodamo stopljeno temno čokolado, razmaščeno kokosovo moko, vinski kamen, vanilijo ter rum po želji. Če namesto temne čokolade Torras in eritritola s stevijo uporabljamo klasično temno čokolado in navaden eritritol, je količino sladila potrebno prilagoditi oz. povečati. V primeru, da je čokoladna masa izredno suha, ji primešamo žlico do dve smetane. Nato vmešamo še sneg. Biskvitno maso naložimo v tortni model, ki smo ga obložili s peki papirjem. V primeru da delamo porcijske tortice pečemo na večjem pekaču in naknadno izrežemo male diske biskvita. Pečemo na 160 stopinj cca 15 minut. 

Medtem, ko se biskvit peče pripravimo pire iz jagod. Zamrznjene jagode damo v kozico, dodamo 1-2 jedilni žlici vode in eritritol s stevijo ter jih na nizki temperaturi počasi odtalimo. Ko postanejo mehke jih damo na cedilo in sok ki odteče shranimo posebej. Jagode s paličnim mešalnikom spasiramo, jih segrejemo in jim dodamo želatino fix (jagodni pire NE sme vret!). Lahko uporabimo tudi agar agar ali želatino v lističih.

Soku od jagod, ki smo jih precedili, dodamo 2 jedilni žlici želatine fix in ga nalijemo v modelčke za praline. Postavimo na hladno.

Ko je biskvit pečen in ohlajen, ga pustimo v tortnem obroču (lahko ga obložimo tudi z acetatno folijo),  nanj naložimo na koščke narezane sveže jagode ter jih zalijemo z jagodnim pirejem. Postavimo na hladno, da se sadna plast malo strdi. 

Kremo pripravimo tako, da stepemo sladko smetano, ki ji dodamo mascarpone in eritritol s stevijo proti koncu miksanja (ko se metlice od mešalnika v smetani lepo poznajo dodamo eritritol s stevijo in  mascarpone ter zmiksamo do konca). Pazimo da sta smetana in mascarpone iste temperature (oba dobro ohlajena). Kremi lahko dodamo tudi pravo vanilijo (vsebino polovice stroka oziroma naravno aromo vanilije). 

Kremo naložimo v dresirno vrečko in jo nabrizgamo na sadno plast. Okrasimo s svežimi jagodami ter jagodnimi žele bonboni, ki smo jih naredili v modelčkih za praline.
