Losos z zelenjavo ''EN PAPILLOTE''

Losos z zelenjavo na »en papillote« način je veliko bolj enostavna jed, kot zgleda na prvi pogled. En Papillote pomeni, da je jed pripravljena v škrniclju oziroma v papirju. Tako pripravljen losos je nežen, sočen in aromatičen. Nemogoče je, da bi bil presuh ali surov v sredini, kot se to lahko hitro zgodi, če ga pečemo na ponvi. 

Ta jed je idealna tudi za posebne priložnosti, kot je Valentinovo, obletnica, rojstni dan…. Zakaj? Ker lahko z malimi detajli pričaramo čarobno vzdušje, ki bo razveselilo naše goste. Jed lahko postrežemo v obliki srčka in srček se pokaže tudi, ko paketek odpremo.

SESTAVINE (za 2 osebi)

  • 2 fileja lososa (2 x 125 g)
  • 1 manjša bučka
  • 1 manjša šalotka
  • Bel del pora
  • 2 kolobarja limone
  • 1 paprika
  • Par češnjevih paradižnikov
  • Sol, poper
  • Rožmarin
  • BIO ghee maslo
  • 2 lista papirja za peko

POSTOPEK

Pripravimo 2 lista papirja za peko. Za posebne priložnosti lahko izrežemo obliko srca. List prepognemo po sredini in zarišemo polovico srca. Izrežemo. 

Bučko narežemo na tanke trakove (lahko si pomagamo z rezalnikom) in malo posolimo, da spusti odvečno vodo. Na trakove narežemo tudi bel del pora in papriko. Paradižnik razpolovimo, limono in šalotko narežemo na kolobarje. 

Losos začinimo s poprom in soljo. Po želji lahko dodamo tudi malo česna v prahu, rožmarina ali namenskih začimb za ribe. 

Srce, ki smo ga izrezali iz papirja za peko, razpremo in ob sredinskem robu naložimo najprej bučke (trakce prej osušimo na kuhinjski brisači) in nato ostalo zelenjavo. Na zelenjavo položimo začinjen file lososa in na nanj razporedimo prerezan kolobar limone ter 1 žličko BIO Ghee masla. Vse skupaj še narahlo posolimo.

Srce zapremo nazaj tako, da prepogibamo robove (zapognemo na vsakem centimetru)  in naredimo nekakšen zgiban rob. 

Po enakem postopku naredimo še z drugim kosom lososa. V primeru, da želimo, da oba zavitka tvorita obliko srca, moramo drugi zavitek obrniti zrcalno (namesto v desno, naredimo rob v levo stran). 

Oba zavitka položimo na pekač in pečemo v predhodno ogreti pečici na 200 stopinj približno 15-20 minut. 

Serviramo v zavitku. Previdno pri odpiranju, ker se bo sprostila vroča para. 

Moj nasvet:

  • V primeru, da nismo ljubitelji lososa, lahko enako naredimo s katerokoli ribo (file) 
  • BIO ghee maslo lahko zamenjamo z običajnim maslom ali z zeliščnim maslom. BIO Ghee maslo jed obogati z odličnim maslenim okusom.
  • Zelenjavo lahko prilagodimo okusu. Lahko bi uporabili tudi šparglje, brokoli …
  • Lahko uporabimo sveže ali zamrznjene fileje lososa. Zamrznjene moramo pred peko odmrzniti in dobro osušiti.
