Kennen Sie Röstis? Das sind im Grunde Kartoffelpuffer, die in der Pfanne gebacken werden. Dazu passt saure Sahne mit Kräutern.

Kartoffeln und die LCHF/KETO-Diät passen natürlich nicht zusammen. Anstelle von Kartoffeln können in diesem Rezept verschiedene Ersatzprodukte verwendet werden, z. B. Kohlrabi und Chayote.

Im Falle von Spaghettikürbis können auch gehackte, gekochte Spaghetti verwendet werden.

ZUTATEN (für etwa 10 Röstis)

  • 350 g Spaghetti aus Spaghettikürbis (gekocht oder gebacken)
  • 100 g geriebener Käse
  • 1 großes Ei (oder 2 kleinere)
  • 2-3 Esslöffel Live & love Bio-Kartoffelfaser zum Andicken
  • Salz, Pfeffer, Knoblauchpulver, andere Gewürze nach Belieben...
  • Schweineschmalz oder Bio Ghee Butter zum Backen

Wenn Sie einen Spaghettikürbis haben, bereiten Sie ihn wie folgt vor: Halbieren Sie den Kürbis (mit Schale), entfernen Sie die Kerne, salzen und pfeffern Sie. 2 Finger breit Wasser in einen Bräter geben und den Kürbis mit der Schnittfläche nach unten in das Wasser legen. Den Kürbis bei 180-200 Grad ca. 30-40 Minuten garen oder backen (je nach Größe des Kürbisses - je kleiner der Kürbis, desto kürzer die Garzeit). Den Kürbis etwas abkühlen lassen und dann mit einer Gabel das Fruchtfleisch herausschälen, so dass lange Spaghettiformen entstehen. 

Die Spaghetti können im Kühlschrank aufbewahrt werden und halten sich in einem abgedeckten Gefäß problemlos bis zu einer Woche. 

Für die Röstis die Spaghetti in kleine Stücke schneiden, Ei, Käse, Salz, etwas Petersilie und ein paar Esslöffel Bio-Kartoffelfaser zum Andicken hinzufügen. Die Masse wird recht weich und es ist am einfachsten, die Röstis direkt auf das heiße Schmalz zu legen. Bei mittlerer Hitze langsam backen, bis sie schön gebräunt sind. Zwischendurch einmal vorsichtig wenden.

Meine Anmerkungen zum Rezept:

  • Anstelle von Spaghettikürbis können Sie auch geriebenen und gekochten oberirdischen Kohlrabi oder Chayote (auch eine Zucchinisorte) verwenden.
  • Die Mischung kann mit gewürfeltem Speck verfeinert werden.
  • Sie können auch auf Backpapier im Ofen gebacken werden, aber dann werden sie nicht so knusprig.
