Erdbeerbombe

Dieses Dessert ist ideal, wenn frische Erdbeeren verfügbar sind. Die Zubereitung erfordert zwar etwas Geschick, aber das Endergebnis ist es wert.

Für die Zubereitung benötigen wir eine Schüssel mit einem Durchmesser von 20 cm. Idealerweise sollte es möglichst halbkreisförmig sein.

Rezept für eine Kuppel mit einem Durchmesser von 20 cm

BODEN:

CREME:

  • 250 ml süße Sahne
  • 250 g Mascarpone
  • 2 Esslöffel Fix-Gelatine (oder 1 Blatt Gelatine in Blättern – gemäß den Anweisungen auf der Tüte zubereiten)
  • 2-3 Löffel Erythrit mit Stevia Live & Love
  • Inhalt einer Vanilleschote
  • 1 Korb frische Erdbeeren (500 g)

ZUBEREITUNG:

Die Eier trennen und das Eiweiß schlagen. Das Eigelb mit Erythrit und Stevia schaumig schlagen, die geschmolzene Butter dazugeben, langsam die trockenen Zutaten sowie die süße Sahne und den Rum dazugeben. Zum Schluss den Schnee vorsichtig mit der Hand unterrühren.

Die Masse auf einem mit Backpapier belegten Backblech verteilen (der Keks sollte einen Durchmesser haben, der so groß ist wie die Schüssel, in der wir ihn stapeln). Bei 180 Grad etwa 15 Minuten backen. Überprüfen Sie am Ende des Backvorgangs mit einem Zahnstocher, ob es gar ist. Den Keks abkühlen lassen.

Erdbeeren waschen, in etwa 3-4 mm dicke Ringe schneiden. WICHTIG: Fetten Sie die Schüssel mit etwas Öl oder Butter ein, bedecken Sie sie mit transparenter Folie und beginnen Sie, die geschnittenen Erdbeeren entlang des Umfangs (auf der Folie) nebeneinander zu stapeln. Die Folie dient dazu, das Herausnehmen des Teigs aus der Schüssel zu erleichtern. Fetten Sie die Schüssel unter der Folie ein, damit die Folie gut an den Schüsselwänden haftet und sich nicht ausbreitet.

Die Creme wird zubereitet, indem man die süße Sahne mit Fix-Gelatine und dem Inhalt der Vanilleschote (oder dem Vanillearoma) fast bis zum Ende mischt und kurz vor Ende des Mischvorgangs Mascarpone und Süßstoff nach Geschmack hinzufügt. Gelatine kann auch weggelassen werden, insbesondere wenn Sie festen Mascarpone haben.

Gießen Sie die Sahne (oder spritzen Sie sie, es ist einfacher) in die Schüssel mit den überzogenen Erdbeeren. Die restlichen Erdbeeren vor dem Falten aufbewahren und auf der Creme verteilen. Auf Wunsch können auch ganze Erdbeeren mit der Spitze nach unten gleichmäßig verteilt in die Creme geschoben werden, so dass sie im Querschnitt schön aussehen. Legen Sie den Keks (den wir mit Hilfe einer Schüssel auf den genauen Durchmesser der Schüssel zuschneiden) darauf und drücken Sie ihn leicht an, um eventuelle Lücken zu füllen. Mit Klarsichtfolie abdecken und einen halben Tag oder am besten über Nacht kalt stellen.

Wenn alles abgekühlt ist, die Schüssel vorsichtig auf den Boden stellen, die Folie entfernen und servieren.

MEIN TIPP:

Die Creme kann auch mit Erdbeeren oder mit Erdbeerstückchen zubereitet werden. Der Kombination aus Sahne und Mascarpone werden gekochte Erdbeeren hinzugefügt. Anstelle von gekochten Erdbeeren können wir auch Erdbeermarmelade von Live & love ohne Zuckerzusatz verwenden – das Erdbeeraroma kommt dadurch deutlich stärker zur Geltung. Achten Sie in diesem Fall darauf, die Sahne vorher nicht zu stark zu süßen, da die Marmelade bereits mit Erythrit gesüßt ist.
